It’s that time of year again, the summer holidays are over and the kids are heading back to school (Doesn’t it go quickly?)! If your little one is nervous about that first week back, why not pack them the perfect packed lunch to help them through it? This is also a good idea for a treat, for example for birthdays, or to reward good marks or other achievements!

What you need…

  • Shape cutters – We used hands, but you could use stars, or hearts, or even people!
  • Reversible pastry cutter
  • Small star cutter
  • Wooden skewers
  • Plastic food boxes
  • Silicone muffin cases

Ham & cheese sandwich shapes

 

Ingredients

  • bread
  • butter
  • ham
  • cheese

Butter 4 slices of bread and use a cookie cutter to cut out shapes. Take a slice of ham and a slice of cheese and, using your cookie cutter of choice, cut out some shapes to match the bread.

Assemble the sandwiches using 2 bread shapes, one ham, and one cheese in each.

Cucumber crinkles and carrot stars

 

Ingredients

  • cucumber
  • carrot

Wash the cucumber and slice. Using the reversible cutter, cut out “crinkles” from the cucumber slices.

Peel the carrot and slice. Using the star cutter, cut star shapes from the carrot slices.

Fruit skewers & strawberry dip

Ingredients – skewers

  • banana
  • strawberries
  • raspberries
  • blueberries
  • marshmallow

Ingredients – dip

  • 4 strawberries
  • 1 tbsp cream cheese
  • a drizzle of honey

Wash and chop the fruit and marshmallow and assemble on a cocktail stick (little ones will need to be careful with these!).

Put the ingredients for the dip in a bowl or blender and blend until they become yogurt-like in consistency.

Pour into a small plastic food container (like this one) to stop mess!

If using banana on the skewers, it may be worth placing these into a container as well, to stop the banana going brown!

Then…

Wrap the ham and cheese sandwich shapes, carrot stars and cucumber crinkles in some cling film, and place into the muffin cases so they don’t get bounced around on the way to school. Then, pack everything into a lunch box or cool bag, add some small bags of healthy snacks like dried fruit or nuts, and a flask or carton of water or fruit juice, and they’re good to go!
