What you need

  • 1 courgette
  • 2 carrots
  • 1 onion
  • 1 cup of small pasta e.g. anelli or orzo
  • 1 tin of chopped tomatoes
  • 500ml chicken or vegetable stock
  • 1 cup of water
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp sugar
  • 2 tbsp olive oil
  • a squeeze of lemon juice

What you do

1. Peel and chop the onion. Fry in a pan using olive oil until it softens down.

2. Chop the carrots and add to the pan, then add the chopped tomatoes. Stir and leave until the carrots are slightly cooked.

3. Pour in the chicken or vegetable stock and the water and wait for it to boil. Once the mixture is boiling, add the pasta and stir.

4. Chop the courgette and add to the pan. Add the salt, pepper and sugar for seasoning and stir well.

5. Leave to simmer on a low heat for 5 minutes, add the lemon juice and then leave for another 5 minutes.

6. Serve in a big bowl, and enjoy from the comfort of your bed or the sofa.
