Chunky chicken stir-fry ingredients

Ingredients (serves 2):

  • 2 egg noodle nests
  • 1 carrot, sliced
  • 1 red pepper, sliced
  • 2 spring onions, chopped
  • 1 small pack of baby corn
  • 1 small pack of sugar snap peas
  • 100g beansprouts
  • 200g cooked chicken, chopped
  • 2 tsp soy sauce
  • 2 tbsp hoisin sauce
  • a squeeze of sweet chilli sauce
  • 2 tbsp cooking oil

How to make…

1. Boil some water in a large saucepan and add the noodle nests. Cook according to packet instructions, drain and put to one side.

2. Heat the cooking oil in a wok and add the chopped spring onions. Add the carrots and stir, then add the baby corn and sugar snap peas and leave to cook for a couple of minutes, stirring periodically.

3. Add the red pepper and beansprouts and again leave to cook for a few minutes until the vegetables are soft.

4. Add the chicken and heat, ensuring the meat is hot through.

5. Mix in the soy and hoisin sauces, and add the noodles and sweet chilli sauce.

6. Stir for another couple of minutes and then serve.

Top tips:

Veggie? Leave out the chicken or add tofu

Mix it up with different vegetables. Try adding courgettes, mushrooms or broccoli.
