With Bake Off back on our screens, Cake Week has already got us raring to roll up our sleeves and get our bake on. On the hunt for some yummy baking ideas, we’ve teamed up with Insta’s lifestyle guru @lindyandcohome, whose recipe for a banana and chocolate nut bake looks totally scrummy! With only 10 ingredients, it’s so easy to make that even the kids could get involved! Here’s how it’s done…

What you’ll need

110g butter melted

3 over-ripe bananas mashed

2 eggs

85g caster sugar

250g plain flour

2 tsp baking powder

1/4 tsp salt

110g maple syrup

85g walnuts and hazelnuts chopped

60g dark chocolate chopped (you could also use chocolate chips)

Method

  • Pre-heat oven to 160 degC (140 deg fan/ gas mark 3) and grease and line a loaf tin with a strip of greaseproof paper so it overhangs each end
  • Mash the bananas in a large mixing bowl until smooth and add the melted butter, eggs and maple syrup. Beat with a whisk until eggs are mixed well
  • In a separate bowl mix the sugar, flour, salt and baking powder with a wooden spoon then sift into the wet banana mixture
  • Fold all together until it’s a smooth mixture
  • Fold in 3/4 of the nuts and chocolate (save some for later)
  • Pour the mixture into the tin, then sprinkle the rest of the nuts and chocolate over the top
  • Bake for 1 hour 10mins until golden or skewer inserted in the middle is clean
  • Leave to cool for 10mins and lift out onto a cooling rack
  • Sit back, relax with a cuppa and let the kids do the washing up! (optional)
